  • 1 cup unseasoned butter melted
  • 2 cups refined sugar
  • 3 eggs temperature
  • ¼ cup contemporary fruit crush
  • 1 tbsp flavorer
  • 3¼ cups general flour
  • ½ tsp salt
  • 2½ tsp leavening
  • ¾ tsp sodium hydrogen carbonate
  • 1 tsp cinnamon
  • pinch of ground cloves
  • pinch of ground nutmeg
  • 2 cups chopped carrots
  • 1 cup chopped zucchini
  • 1 cup diced in the buff apple (Granny Smith, Fuji, no matter you’ve got on hand)
  • ½ cup pecans cut

Cream Cheese Glaze/Frosting:

  • ½ cup cheese softened
  • ¼ cup butter softened
  • 2 – three cups granulated sugar
  • 1-3 tbsp fruit crush as required


  1. Preheat the kitchen appliance to 350 degrees.
  2. Grease and flour 2 8×4 in. loaf pans. Line with parchment paper and put aside. (I use the baking spray with flour in it.)
  3. Place zucchini during a massive room towel. talk about the four corners and twist. Squeeze the towel to extract all the liquid from the zucchini, or the maximum amount as you’ll. Set aside.
  4. In a massive bowl, whisk along flour, salt, leavening, sodium hydrogen carbonate, cinnamon, cloves, and nutmeg along. Set aside.
  5. In a separate massive bowl, whisk along the butter and sugar.
  6. Add eggs, fruit crush, and vanilla and whisk till combined.
  7. Fold dry ingredients into wet ingredients beside the chopped carrots, chopped zucchini, apples, and pecans.
  8. Pour into ready pans.
  9. Bake till golden brown, fifty five to hour, or till loaves spring back once gently ironed with fingers.
  10. Let cool utterly before icing.

Cream Cheese Glaze/Frosting:

  1. Cream along cheese and butter with a hand mixer.
  2. Add in a pair of cups of granulated sugar and continue mixture. Drizzle in fruit crush till desired consistency is achieved.
  3. Frost bread and enjoy!


  • The carrots and zucchini during this formula area unit interchangeable. be happy to use less or a lot of of every. you simply need 3 cups total.
